Discovering the First Organic Bread School

In the Jabron Valley, the Thomas Teffri-Chambelland international baking school provides future bakers with a program between tradition and innovation.

Resembling a chalet, and perched in the hills around the village of Saint-Martin, the International Bakery School is unique. Set up in 2006 by its founder and director Thomas Teffri-Chambelland, this establishment has the mission of "training adults in the wonderful profession of baker, providing them with a maximum number of tools to enable them to feel free to fulfill their individual needs."

Not surprising for this former biology professor who, having started his own bakery The Paline in 2001, continued his ascension with the creation of a farm and two companies specializing in the concept of natural sourdough bread. An impressive track record for this Provence native, confirmed by the development of his training center since 2009, "the only one to offer this type of training," he says.

During a four-month program, Thomas and his instructors accompany "adults between the ages of 30 and 50 undergoing professional retraining or wishing to start their own business." At stake, a diploma recognized by the state since 2013, allowing these aspiring organic bakers to embrace the career of their dreams in France or abroad.
